In Texas, we’ve already started getting a taste of what’s commonly known as our fifth season…August. It’s usually the hottest month of the year and triple-digit days happen on the regular. It’s one hot day after another.

Sometimes it seems impossible to get some relief from the heat. My favorite way to cool off on a hot summer day, is drinking summer cocktails.

But sometimes the temps are unbearable and I crave alcoholic popsicles. After picking up this ice pop mold for my Boozy Bloody Mary Ice Pops, I was excited to keep going.

The popsicle mold is versatile and there are so many different ways it can be used. I can use it to make a fun treat for the girls or add some alcohol for a popsicle cocktail.

It’s peach season, so my favorite cocktail recipe this time of year is a bellini cocktail. I’m all about an easy recipe and a sucker for sparkling drinks.

The peach bellini recipe I use is just processeco and peach nectar. If I can’t find peach nectar, I sometimes sub peach juice.

This is basically just a traditional bellini recipe. This cocktail popsicle does not have any simple syrup, ice cubes, or extra sugar.

For a frozen twist on this, I combined the same ingredients with orange juice to make frozen peach bellini ice pops. Depending on the type of alcohol you use, it won’t freeze so juice is necessary.

But if salty is more your thing, another one of my favorite recipes is this Bloody Mary Ice Pops recipe! A fun idea is to make a variety of these bellini popsicles for your next summer party!

These Frozen Peach Bellini Ice Pops are perfect for hot summer nights and with less sugar than ice cream. You can easily make these without alcohol content by swapping in ginger ale or lemon lime soda.

Peach Bellini Popsicles Ingredients

  • Peaches
  • Orange Juice (you could also use mandarin juice)
  • White wine

How to Make Frozen Peach Bellini Ice Pops

Slice and pit fresh peach slices. You can use white peaches or regular peaches for this recipe. This recipe also works well with fresh or frozen peaches.

Add peaches and orange juice to a blender or food processor and purée. Then, add the wine to the peach puree and blend until smooth.

You can also substitute sparkling wine, prosecco, or peach schnapps for the wine if you’d like. The peach purée will have a special pink color to it.

Pour the peach mixture into the popsicle molds, up to the fill line. Insert the lids and snap on tightly.

If you are using wooden sticks, freeze for 45 minutes first. Then, then insert the sticks into each cup.

Freeze overnight or for at least 6 hours. Before serving, run warm water on each ice pop mold for about 5 seconds and release.

Another idea is to make a refreshing summer drink of peach bellini slushies! Using the original recipe, allow to chill for just 2-4 hours and then pour into champagne flutes and garnish with slices of peach.

You can save any leftover mix in the popsicle molds or pour into ice cube trays. This will give the perfect treat whenever you want it!

Flavored Bellini Ideas

  • Fresh raspberries: add a little tartness and variety to this recipe by adding raspberries or raspberry juice
  • Lemon or lime juice: if this frozen treat is a little too sweet for you, add a splash of lemon juice.
  • Strawberry puree: a great way to add a little extra sweetness and intensify the pink hue
  • Garnish with: a little sugar rim, fresh peach wedges, or fresh ginger
