My Favorite Mediterranean Recipe
There are a few things that I really adore: chicken, easy recipes, and Mediterranean food. This recipe is all three. Oh, and my kids love it too – extra bonus!
Lemon Caper Chicken Ingredients
There are only a few ingredients in it. That’s what makes it so easy to make.
Here is what you will need to make your own.
- Chicken breasts
- Extra virgin olive oil
- Flour
- Red onion
- Chicken broth
- Lemons
- Capers
What are Capers?
Capers are flower buds from the caper bush. They are grown in the Mediterranean region. They are always pickled with vinegar and salt. If you picked one fresh, it won’t taste nearly as good.
Larger capers have a much fuller flavor, but their texture is different. Most people prefer smaller capers.
What type of chicken should you use?
You’ll find lots of different cuts of chicken in the grocery store. So what is the best one for this recipe?
I like to use chicken breast tenders because it is already cut nice and thin. It’s so easy to cook when it is already cut small like this.
Other options that will work include:
- Chicken Breast – You can cut it into thin tenders before cooking.
- Chicken Thighs – You can use either bone-in or boneless. For this recipe, I suggest using boneless thighs. It will be easier to eat.
Gluten-Free Substitution
This recipe uses all-purpose flour. But if you are on a gluten-free diet you can use any kind of gluten-free flour that you want. Almond flour is one of the most popular options out there.
How to Make this Recipe Keto-Friendly
This recipe is already low-calorie and incredibly nutritious! But if you are following a Keto diet, the flour has too many carbs.
This is so easy to fix.
Just use almond flour instead of all-purpose flour. It will give it a protein boost and make it even lower in net carbs. Just know that it does brown faster than traditional flour.

Lemon Caper Chicken
Ingredients
- 2 tbsp olive oil

boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 red onion diced

chicken broth
- 2 lemons juiced
- 2 tbsp capers
Instructions

Heat a skillet over medium heat. Meanwhile, pound the chicken breasts with a meat tenderizer to flatten.

Mix flour with salt and pepper. Lightly coat each chicken breast in flour mix and set aside.

Once skillet is heated, add olive oil. Then add chicken breasts two at a time to the skillet. Cook for approximately 3 minutes on each side, until browned and internal temperature has reached 160 degrees.

Place cooked chicken breasts in oven to keep warm while cooking the remaining chicken breasts.

Once all of the chicken is cooked, add remaining olive oil to skillet and brown onions. Once browned, add lemon juice and chicken broth and continue to simmer until sauce has thickened. Then add capers and return chicken to skillet and serve.
