Preheat your oven to 350 degrees F.

Cream together butter and sugar together until light and fluffy.

Mix in the Baileys, the egg and vanilla. Beat until well combined.

Add the remaining dry ingredients and mix until smooth.

Make balls about 1 tbsp in size using a spoon or medium cookie scoop and press until slightly flat. (Hint: the dough will not spread when it bakes.)

Place on parchment lined cookie sheet.

Bake for 6-7 minutes.

While cookies are cooling melt white chocolate chips in a small bowl in the microwave.

Warm in 30 second increments at 50% power to avoid burning the chocolate.

Dip cookies, one at a time into the chocolate. Place on parchment paper and decorate with sprinkles (optional).

Let stand for 20 minutes for chocolate to harden fully on cooling rack.
