Wash and thoroughly dry strawberries.
Line baking sheet with parchment, wax, or a silicone baking liner. Set aside.
If you're using melting chocolate wafers, you'll just melt the chocolate according to the package instructions. If you use chocolate chips for dipping, you'll want to place the chocolate chips into a microwave-safe bowl with 1 tablespoon of coconut oil. Cook in 30-second increments, stirring in between until chocolate is almost completely melted. You'll likely have a few chip pieces still in there but be careful not to overcook.
Dip each strawberry into the melted chocolate. You'll have to twist it around in the bowl to thoroughly coat. Allow excess chocolate to fall back into the bowl, before laying on baking sheet.
Continue until all strawberries are covered in chocolate. You can either allow to harden at room temperature or place in the fridge for 5-10 minutes.
