  1. Sauté onion in olive oil.
  2. Add uncooked Arborio Rice.
  3. Add white wine, salt, and pepper, and cook until liquid is absorbed.
  4. Add chicken stock and continue stirring.
  5. Cook for 20 to 30 minutes, or until most of liquid is absorbed.
  6. Meanwhile grill lobster until white and flaky, approximately 5-7 minutes on each side.
  7. Remove lobster from tail, roughly chop and add to risotto.
  8. Finish with butter, parmesan, and lemon.
