With the weather cooling slightly in Texas (dipping below 100 degrees), my mind is already thinking about soups. One of my family’s favorite recipes is a traditional Clam Chowder. After lots of trial and error with various recipe, this is hands down the best combination of ingredients that is always sure to please. I just made this recipe and I’m already craving it again after just a few days. If you have a hearty appetite or just like to have lots of leftovers, you might want to consider doubling the recipe. I can only imagine this recipe will be even more recipe once the weather is even cooler outside.
Best Clam Chowder Recipe with Bacon
This is the best clam chowder recipe you'll eat outside of Boston with a special ingredient that makes everything better.
Ingredients
- 4 6.5 ounce cans chopped clams
- 5 slices of bacon
- 1 yellow onion diced
- 1 c. celery diced
- 1 c. carrots diced
- 2 c. potatoes cubed
- 1 qt. half-and-half
- 3/4 c. butter
- 3/4 c. all-purpose flour
- 3 tbsp. red wine vinegar
- 1 tsp. cayenne pepper more to taste
- salt and black pepper to taste
Instructions

In a large skillet over medium heat, fry bacon until crispy. Set aside.

In the same skillet, combine veggies with drained clam juice. Add water to cover and cook until veggies are tender.

In a stockpot or dutch oven, melt butter over medium heat. Slowly whisk the flour in with the butter until smooth. Then, whisk in the half-and-half stirring constantly. Continue stirring until mixture has thickened and is smooth.

Stir in the veggie mix along with the juices. Turn down the heat and allow to heat throughout but do not bring the mix to a boil.

Add in the cayenne pepper, vinegar, and any additional salt and pepper you’d like to add.

Once the soup is hot, stir in the clams.

Serve immediately with crusty bread!

The title says, "Clam Chowder with Bacon" But, there is no bacon listed in the ingredients or in the instructions! Where's the BACON?

This makes at least 6 generous servings but you might be able to squeeze 8 out of it depending on the size of your bowls.
