With two daughters under the age of 5, I have to rely on caffeine to make it through the day. While energy drinks might pack the most punch per serving, I just can’t bring myself to ingest something that (to me) tastes like fluoride for my fix. What can I say? There’s just something about coffee that gives me a better, more flavorful, and aromatic boost of energy than sodas or energy drinks can provide.
For the most part, at home, I drink hot coffee with milk and sugar. It’s not the option that’s lowest in calories, but it’s flavorful and definitely my preferred way to start the chaos of my day.
Drinking coffee a hot cup of coffee in the morning might be the expected start to most people’s days, but it’s the pickups later in the day that don’t always include coffee. I know quite a lot of people that deviate from coffee, but I’m a loyal fan of the java and love the stuff so much I happily include it into most parts of my day.
Since my husband is trying to get fit this year, I’m trying to support him in this by having lower calorie alternatives on hand. Yet I don’t want to sacrifice on flavor. I shared with you last year, how I use International Delight Iced Coffee to stave off afternoon energy drops. But after a recent trip to the store, I found out that there’s a light version of the iced coffee which tastes just great and has 1/3 less calories than the original.
Some nights, we need to indulge in a little bit of delicious normalcy and so I’ve been pondering a way to keep the flavor of coffee going a little longer. After planning a vegetarian lasagna dinner, I decided that a healthier tiramisu recipe would be an ideal ending. Like I said, being a working/blogging mom to two can prove challenging so I try to make all of my time count. Why spend extra time on unnecessary parts when creating a dish if you don’t have to? I created a semi-homemade, quick, easy, and deliciously lower calorie tiramisu recipe. I like the traditional, alcohol laden version as much as the next person. But with dessert hungry, chocolate grubbing little mouths hanging around, alcohol free is definitely the way to go. And it cuts extra calories without sacrificing flavor!
Easy Tiramisu Recipe
Yield 6 servings – 220 calories per serving!
Ingredients
1 loaf prepared angel food cake
8 oz. fat-free cream cheese
2 tbsp. sugar
1/2 c. fat-free whipped topping
1 c. International Delight Light Mocha Iced Coffee
sprinkling of cocoa powder
Directions
- Slice angel food cake into six slices.
- Mix cream cheese, whipped topping, and sugar together until smooth.
- Arrange three cut slices of angel food cake along the bottom of loaf pan.
- Brush tops of cake with half of the iced coffee.
- Spread half of cream cheese mixture onto the angel food cake in pan.
- Repeat with remaining angel food cake, iced coffee, and cream cheese mixture.
- Sprinkle with cocoa powder and refrigerate for at least one hour.
