Homemade French Onion Soup Recipe

It has been raining all weekend long here in Austin. Rainy weather to me means one thing…soup!

One of my favorite kinds is French Onion Soup but I usually will just buy a can or wait until we go out to a restaurant to enjoy a bowl. After this weekend, I no longer have to wait on anyone else so I can enjoy a hot bowl as I’ve created my own recipe for homemade French Onion Soup.

I’ve only made homemade French Onion Soup once before and that recipe needed to be seriously modified to be up to my standards. The first time around I used red onions – mistake number one.

I also tried to skimp on the beef consume and substitute with beef broth and water – mistake number three. But the final tweak that needed to come was the bread and cheese.

In my opinion, those two components are what really set this dish apart but my previous attempt at French Onion Soup. Even though the cheese is a little pricier than I would normally like to spend it truly made all the difference in the world and my husband declared this soup a definite success. Being the meat lover he is, I think he’s now focused on finding a way to incorporate meat into it (not going to happen).

French Onion Soup

  1. Melt butter over medium heat. Add onions and stir until translucent, about 15 minutes
  2. Mix flour with onions, then gradually add beef broth, consume, wine, and spices.
  3. Bring to a boil and let simmer for 15-20 minutes.
  4. Place baguette slices on a cookie sheet and top with cheese. Broil until cheese melts and bread is toasted about 5 minutes.
  5. Ladle soup into bowls and top with cheesy bread slices.

French Onion Soup is the best! I agree, you definitely need the Gruyere cheese. I think one time I tried to skimp & use shredded mozzarella--ugh.

This is definitely not a recipe I could afford to make every week. I think I need to start moving out of my comfort zone with the ingredients though because this was definitely worth it! BTW my grocery store did not have truffle oil but I forgot to look in the natural/organic section so maybe it's there I just didn't look hard enough.

I made French Onion Soup not too long ago. I hate how it makes the house smell like onions, but it's a small price to pay for a warm, rich soup topped with melted cheesy goodness. I think it's worth it to pay for the Gruyere too :)

I cook with onions all the time so it doesn't bother me too much. I think it's worse when I make bacon - it smells like a greasy diner in here.
