Like most of the country, Austin has been hit with a bit of a cold spell these last few days. While our definition of cold (or at least mine) doesn’t come close to rivaling that of the northeast and the snowpocalypse, it’s still quite a bit cooler than we’re used to and much colder than you might envision for a Texas winter. For a Colorado transplant, these temperatures are just not what I bargained for when moving south.
Since I can’t bring back the 80-degree days from last week back by sheer will alone, I decided to channel warmer days with my breakfast. While I skip breakfast more days than I should because of my schedule, it really is the most important meal of the day.
Preparing a breakfast that’s full of rich flavors just screams cold weather. Instead, I created a tropical-inspired breakfast that while filling is still light and brings back visions of warmer days.
Tropical Morning Oats
2/3 cup Kashi Go Lean Crunch Honey Almond Flax Cereal
1/2 cup coconut milk (you could also use almond, soy, or regular)
1/2 small banana, diced
1 tbsp. shredded coconut
3 tbsp. pineapple chunks, diced
I made this recipe on a whim because all of the ingredients just sounded like they mix together so amazingly and they did! This recipe ended up making a little more than I would normally prepare but it was super easy to finish. And if the tropical flavors aren’t enough and you have a hard time eating cold cereal on a cold day, I’m sure heating this up would turn up just as well and warm your tummy too!
