I don’t know about you but my holiday baking schedule has already started ramping up. From our favorite fall treats and Thanksgiving dishes to prepping for all of the Christmas cookie exchanges just around the corner, my oven is at this time of year more than any other time.
If you’re like me, you find yourself making the same recipes year after year during the holidays. But cookies gives you the perfect opportunity to switch things up and try something new.
There are some recipes I try to avoid because of allergens when I’m participating in an exchange or when gifting like peanut butter cookies. And others like these soft chocolate chip cookies I know will be a crowd pleaser but that a dozen other people are likely to bring.
My favorite way to add some of the smells and flavors of the season into my baking is with some super soft snickerdoodle cookies. These cookies are pretty universally loved but still not something that everyone thinks to make.
Super Soft Snickerdoodle Cookies
Don’t settle for flat, hard cookies. These super soft snickerdoodle cookies are the perfect recipe for dessert or your Christmas cookie exchange!
Ingredients
- 3 cups flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- 2 tsp. cinnamon
- 1 cup butter room temperature
- 1 1/4 cups white sugar
- 1 egg
- 2 tsp. vanilla extract
Cinnamon sugar topping:
- 1/4 cup white sugar
- 2 tsp. cinnamon
Instructions

Preheat oven to 350 degrees F. Lightly spray baking sheet or line with silicone baking sheet or parchment paper. Set aside.

In a medium mixing bowl, stir together flour, baking soda, cream of tartar, and cinnamon.

In another medium to large mixing bowl, using a hand or stand electric mixer, cream together the butter and sugar until combined. Then mix in the egg and vanilla extract until well combined.

Mix the dry ingredients in with the wet ingredients a little at a time until combined, then refrigerate for 30 minutes.

While the cookie dough is chilling, in a small bowl mix together cinnamon sugar topping.

Using a medium sized cookie scoop, create cookie dough balls rolling each in cinnamon sugar topping before placing on baking sheet.

Bake for 8 minutes. Allow to cool on cookie sheet for 2-3 minutes before transferring to wire rack.

Can you make snickerdoodles without cream of tartar?
You can make snickerdoodle cookies without cream of tartar but it will affect the taste. Cream of tartar gives snickerdoodles that tangy flavor. If you do choose to leave out the cream of tartar (or you just don’t have any on hand), you can sub out the cream of tartar and the baking soda and add an equal amount of baking powder instead.
