Blueberry Crisp: The Perfect Breakfast

Now that the weather is heating up, warm weather entertaining seems to be in full swing. Spring and summer is definitely a huge time for gathering together with friends, family, and neighbors and celebrating. With all of the get-togethers, we’ve been attending it’s getting kind of challenging to come up with something new to bring to each event.

Because you can’t show up somewhere empty handed, that’s just rude!

Instead, I’ve been making it my mission to compile a list of the easiest, most delicious recipes I come across. When we’re looking to mix up our menu during the week, I pop in one of these “party recipes” so that we can try it out ahead of time. You don’t want to bring something completely new to a party and just hope it goes over well.

I prefer to make a recipe first and seeing whether or not it’s worth bringing along to a crowd. Our own personal tastes can sometimes get in the way of the general consensus on a dish. If it were up to me, there’d be lots of salt and lots of spice and some people just don’t love it quite like I do.

The Easiest Blueberry Crisp Recipe

Still, you likely won’t please everyone with every recipe you try. But this super easy Blueberry Crisp recipe is probably the closest thing you’ll come to doing just that!

With only six ingredients that you likely already have in your house (or will after you try it out), you can have a crowd-pleasing blueberry crisp in just 35 minutes! That includes prep and cook time even.

Blueberry Crisp Shopping List

This is what you will need from the store before you make your own blueberry crisp:

  • 21 ounces of Blueberry Pie filling
  • All-purpose flour
  • Brown sugar
  • Quick-cooking oats
  • Cinnamon
  • Hellman’s Mayonnaise

Seriously, I spend the most time pinching the crumble for the topping than any of the other steps. And confession, I’ve made this recipe three times in the past week (including an Easter garden party)…it’s that good!

How to Use Mayonnaise in Baking

The super-secret sixth ingredient in this recipe is something you would probably never guess. Instead of eggs, butter, milk or anything like that you use Hellman’s mayonnaise instead! It really works!

How do you use mayo in baking? Mayo can substitute eggs and oil in baking since it’s basically made up of eggs and oil. There isn’t any funky aftertaste. In fact, you can’t even tell you used mayo instead of eggs and butter and oil. In fact, the Kitchn has a chocolate cake recipe that uses mayonnaise.

I’m a bit of a snob when it comes to mayo and only buy Hellman’s* because it’s such a great addition to tuna salad, egg salad, and even my mom’s guacamole! But now I can’t wait to find more recipes I can use it in that will make life so much easier!

*Fun fact: having traveled all over and being a mayonnaise snob, I’ve learned that Hellman’s and Best Foods are one and the same! Hellman’s is available east of the Rocky Mountains and Best Foods is available on the western half of the country! Plus, both brands service many different countries around the world!
