When we moved to Texas, we had big plans for what our life would look like. We were new parents and wanted to do what was best for our daughter and our little family. Really we just wanted to live the best, healthiest life we knew how.

One of the things we started doing was reexamine the foods we were eating and the products we were using. The things we had always used suddenly didn't seem like the best choices anymore. We needed to make a change.

These days we have a lot more going on in life. Two kids, two dogs, two chickens, both of us with full-time jobs, and volunteer commitments. We had every intention of gardening again at our new house, but that never happened. It just got to be too much. Something had to give.

Easy Greek Salad with Rotisserie Chicken

Ingredients

  • 1 head Romain lettuce chopped
  • 1/2 cup Open Nature Whole Roasted Chicken shredded
  • 1/2 cup red onions chopped
  • 1/2 cup tomatoes chopped
  • 1/2 cup cucumbers chopped
  • 1/4 cup pitted kalamata olives
  • 1/4 cup crumbled feta cheese
  • optional garnish: pepperocini peppers

Instructions

  1. Starting with lettuce, add all ingredients to a large salad bowl.

  2. Serve topped with Open Nature Balsamic Vinaigrette!

Recipe Notes

Or, if you prefer a Tzatziki inspired dressing, mix 1 cup Open Nature® Plain Nonfat Greek Yogurt Strained with 1/4 cup chopped cucumber, 1 minced garlic clove, the juice of 1 lemon, 1 tablespoon fresh chopped dill, and salt and pepper in a food processor until well blended.
