If you’re on the fence about trying the best low carb chili in my opinion, just keep in mind that Texas chilis never have beans.
While this easy keto chili is made on the stovetop, you could easily make this in your slow cooker or Instant Pot as well.

For the seasoning mix, I just used two tablespoons of my homemade taco seasoning. It’s a great seasoning mix to make in bulk that you can use in so many different recipes!

- 2 tbsp. olive oil
- 1 onion diced
- 3 cloves garlic minced
- 2 pounds ground beef or chuck 80/20 mix
- 2 cans diced tomatoes and green chiles
- 12 oz. beef broth
- 2 tbsp. tomato paste
- 2 tbsp. chili powder
- 1 tbsp. ground cumin
- 1/2 tbsp. paprika
- 1/2 tsp. red pepper flakes
- 1/2 tsp. dried oregano
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1 tsp. black pepper
- 1 tsp. salt
In a Dutch oven over medium-high heat, cook onions until translucent. Then, add garlic and cook for another minute.
Add ground beef to the onion/garlic mix and cook until browned. Sprinkle meat mix with seasoning.
Add diced tomatoes and green chiles, beef, broth, and tomato paste to the pot. Bring to a boil, then cover and simmer for 30 minutes.
