I am a creature of habit. When I find something I like, I stick to it. I usually order the same main dishes and desserts from restaurants and at home rely on a lot of the same recipes month after month.
That’s not to say I don’t like changing things up. Variety is the spice of life after all. But when I’m ready for a chance but not quite ready to go completely out of my comfort zone I tweak a recipe I already make and love.
Last week I was in Walmart picking up craft supplies to keep my girls entertained during Spring Break when we walked down the bribery candy aisle. Across from all of the Easter candy, I spied the new Milky Way Simply Caramel Bites.
I was suddenly struck with inspiration on how to change up my St. Patrick’s Day Rice Krispie Treats recipe. These Milky Way Simply Caramel Bites not only looked like the perfect combination of milk chocolate and caramel, but also an ideal snack to avoid messy hands and faces during the car ride home.

Step 1: Lightly coat 9×13 baking dish with cooking spray.
Step 2: In a medium saucepan, slowly melt butter over low heat being careful not to let it brown.
Step 3: Stir vanilla extract into melted butter.
Step 4: Add marshmallows to butter/vanilla mix and continue cooking over low until marshmallows are completely melted, stirring often. Once marshmallows are melted, continue cooking another 2 minutes and then remove from heat.
Step 5: In a large mixing bowl, add Rice Krispies cereal and pour marshmallow mix over top. Combine ingredients together until Rice Krispies are evenly coated.
Step 6: Pour Rice Krispie mix into prepared baking dish. Using a large piece of wax paper, firmly press Rice Krispies into the dish and even out the surface.
Step 7: In a medium microwave-safe bowl, add Milky Way Simply Caramel Bites and microwave in 30-second intervals until completely melted and smooth. If the texture is still too chunky after several minutes, add 1 tbsp. of milk. Using a rubber spatula, pour melted Milky Way Simply Caramel Bites over Rice Krispie treats and allow to cool.
