Twice Baked Potato Au Gratin Recipe

Most days I eat my lunch while working so I want something that’s both easy and nutritious. This usually means I end up alternating lunches with the same couple of recipes. I eat a lot of salads and baked potatoes but sometimes find myself getting burned out on them if I eat make them exactly the same way with the same toppings every day.

In an effort to not burn myself out on baked potatoes, I’ve been experimenting with new ways to make my potatoes interesting and different than usual. My latest experiment proved to be a success and played off my love of traditional twice baked potatoes but these didn’t take nearly as long. I baked a potato and filled it with more potatoes…potatoes au gratin. It was the best twice baked, loaded, stuffed potato dish I’ve had and definitely wasn’t your typical baked potato. While this dish did take a little longer than regular baked potatoes it was definitely worth it and will serve as a nice addition to meatless Monday or even holiday dinners.

Twice Baked Potato Au Gratin

Ingredients

  • 1 box Betty Crocker Au Gratin potatoes

  • 1 slice bacon

  • 1 baking potato

  • green onions or chives

  • optional: extra cheese, sour cream

 

Directions

  1. Bake Betty Crocker Au Gratin potatoes according to directions on the box.

  2. Meanwhile, cook bacon in skillet and set aside.

  3. Microwave baked potato for 8 minutes.

  4. Chop green onions or chives.

  5. Assemble by slicing baked potato down the center and filling with Betty Crocker Au Gratin potatoes. Top with crumbled bacon and green onions/chives.
