  1. Heat oil in a large nonstick skillet over medium-high heat. Lightly coat chicken with flour, salt, and pepper then cook 4 minutes or until browned. (Don’t worry - the chicken will continue to cook with the barley in step 2.)
  2. Add water or chicken broth to the skillet along with carrots and content of the Know One-Skillet Meals and bring to a boil.
  3. Cover. Then turn down heat to medium-low and allow to simmer for 23 minutes or until the barley is tender.
  4. Place spinach on top of barley mix and cover again for 5-10 minutes or until the spinach has wilted.
