There are so many different modifications that can be made to this Texas Caviar recipe to suit every taste! Below is the mild version that’s sure to please everyone in the family. But if you like things spicy like we do, dicing up a jalapeno, habanero, or adding some red pepper flakes will really heat things up!
1 (15 oz.) can black beans, rinsed and drained1 (15 oz.) can black-eyed peas, rinsed and drained1 (15 oz.) can chickpeas, rinsed and drained1 avocado, pitted and diced1 medium red onion, diced1 medium bell pepper, diced½ to 1 bunch fresh, chopped cilantro (I usually use more)¼ c. lime juice1/8 c. olive oil1 tbsp. ground cuminSalt and pepper, to taste
Combine beans, avocado, onion, peppers, and cilantro in a large bowl. Whisk together the remaining ingredients in a small bowl and pour over the bean mixture. Chill for at least 2 hours before serving.
