Is it just me, or is life almost seems busier in summer than during the school year? Sure you have tons to do during the school year and hours that are locked away for school or work without as many breaks. But you also have that dependable framework of a schedule to work with. In summer, that goes out the window and the structure of your day goes along with it. Playdates, impromptu visits to the pool, and flexible bedtimes don’t coexist well with little ones still needing to eat.

Since our schedule shifts during the summer and our predictable schedule of eating between 5 and 6 doesn’t always happen, my girls start getting hungry before I’ve even made it to the kitchen. When they’re hungry, their patience runs thin and I’m not about to spend any more time than necessary completing dinner.

I don't know if life actually is busier during the summer, or if things are more chaotic due to the lack of a regimented schedule. I must admit that it was easier to plan meals when I had a few hours to myself during the week. Our favorite fast meal: tacos. You just can't go wrong with them, and you can pile on as many veggies as you wish. YUM
