Coleslaw is shredded cabbage with mayo or vinegar-based dressing. This particular recipe is a mayo and vinegar coleslaw and is also known as coleslaw salad.

The great thing about this recipe is you can make it a creamy keto coleslaw by adding more mayonnaise. And if it’s too tart for you, you can add a tiny bit of your favorite keto sweetener.

Why Nature’s Intent ACV?

Growing up, I actually never liked cole slaw. It always had way too much mayonnaise in it for me. So a couple of years ago when a friend brought the inspiration for this recipe to a BBQ, I was wary of trying it. But I’m so glad I did!

While this isn’t a no mayo coleslaw recipe, the tang of Nature’s Intent Organic Apple Cider Vinegar and the creaminess of the dijon mustard means there’s very little mayonnaise in it. So it’s just creamy enough. If you love mayo though, you can increase the mayonnaise to make it even creamier.

Nature’s Intent adds so much depth and flavor to this recipe. It really brightens and awakens the recipe with clean and crisp flavors and adds that little zing that you want from an ACV.

I love that Nature’s Intent is raw, unfiltered, unpasteurized, and made with the Mother (the enzymes from the fermentation process that are most beneficial). Nature’s Intent is also a natural prebiotic which helps make for a healthy gut.

Making Coleslaw

Making coleslaw is easy!

First, shred 2.5 cups each of green and red cabbage. You can hand shred it like I did or buy a prepackaged coleslaw mix.

If you hand shred, use a paper towel to absorb excess moisture and set it aside in a large bowl. Prepare a small bowl for the keto coleslaw dressing recipe.

Mix together Nature’s Intent Organic Apple Cider Vinegar, spicy mustard, and mayonnaise. Add the dressing to the cabbage salad mix. Stir in diced jalapeno, chopped cilantro, and season with salt and pepper before serving!

By adding cilantro and jalapeno, you turn a basic coleslaw recipe into a Mexican coleslaw! That means it’s the perfect coleslaw for fish tacos!

You could also garnish with some green onions. This is an easy coleslaw recipe to make with lots of possibilities for every taste.
