Grasshopper Mini Cheesecakes
What is grasshopper pie?
Grasshopper recipes started with the invention of the grasshopper cocktail in New Orleans. Creme de Menthe, cream, and chocolate liquer were mixed together and named because of the green color.
The grasshopper pie lends its name to the color and flavor of the cocktail. My recipe for grasshopper pie cheesecake is kid-friendly and has no alcohol. Instead, this grasshopper cheesecake uses mint extract and green food coloring
