Spiced Peach Muffins
I don’t know if the sales are happening everywhere, but in Texas, peaches are hugely discounted right now. I bought so many peaches on a recent trip that I didn’t know how we’d possibly be able to eat them all before they went bad.
If you’ve been reading for a while you know that disguising healthy foods in muffins in one of the many tricks I utilize for getting my daughter to eat. So the logical thought process when trying to use a bunch of cheap peaches was to turn them into muffins.
Spiced peach muffins to be exact. I for one, have never had a peach muffin but I had high hopes. I had nothing to lose, right?!
But to my pleasant surprise, these peach spice muffins were really, really good. So good that Cakes was clamoring for them as soon as they were out of the oven.
I only wish that I would have doubled the recipe because these muffins were gone in two days. Seriously. That good.
Peach spiced muffin ingredients:
Unlike some other muffin recipes, these muffins do not have sour cream or baking powder.
How to make peach muffins
Preheat oven to 375 degrees. Line muffin tins with reusable or disposable muffin cups and set aside.
In a large bowl, combine flour, sugars, baking soda, salt, cinnamon, and nutmeg together.
In a separate bowl, combine the vanilla extract, coconut oil, and eggs. Mix the wet ingredients mix with the dry ingredient mix until well combined.
Fold the peaches into the batter. Fill baking cups halfway with a cookie scoop.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool in muffin tin for 5 minutes and then transfer to wire racks to finish cooling.
